What makes this recipe a little different?

The arugula was grown in an Onuà World Smart Aquaponic Garden, where fish, plants and water work together in a circular ecosystem.

No soil is needed — the plants grow in clay pebbles, bringing fresh food production directly into the spaces where people live, work and gather.

And when harvest time comes, the experience continues at the table.

Arugula, Apple & Maple Salad

Serves 4

Ingredients

4 cups fresh arugula

1 large crisp apple, thinly sliced

¼ cup toasted pecans, roughly chopped

¼ cup crumbled goat cheese or feta — optional

3 tbsp extra-virgin olive oil

1 tbsp apple cider vinegar

1 tbsp pure maple syrup

1 tsp Dijon mustard

Salt and freshly ground pepper, to taste

Preparation

In a small bowl or jar, combine the olive oil, apple cider vinegar, maple syrup and Dijon mustard.
Whisk or shake until well blended, then season lightly with salt and pepper.

Place the arugula in a serving bowl and add the sliced apple and toasted pecans.

Add just enough vinaigrette to lightly coat the leaves and toss gently.

Finish with crumbled goat cheese or feta, if desired, and serve immediately.

Tip: Add the vinaigrette
just before serving to keep the arugula fresh and crisp.
